I don't think Intel's chipset shortage is helping AMD in the server segment, but it is contributing to their success elsewhere. Do you doubt this?

I also don't deny that dual core Opteron's strength, along with Intel's late entry into the dual core server market, is a large part of AMD's success in the server segment. It's just silly to think this will continue after Intel catches up in performance and starts leading in features.
