I'll take your advice and plant some garlic, leeks, and parsnips myself. I've got garlic growing now and will use a bulb or two for the winter.
I left a couple of onions in the ground last fall too, it was fun going out in the garden in February and having fresh onions. Mom was stunned and pleasantly surprised that I could do it.
I also did something totally new for us last year. I grew squash and stored it in the basement over winter. The same time in Feb that Mom was here, I went down and got 3 of them. We split them open, scraped out the seeds, put butter, cinnamon and brown sugar on them and baked them. They were absolutely delicious. A friend recommended that I wash the outside of the squash with a watered down, light bleach mix to ward off mold before storage. They were as fresh looking as the day I picked them.
This year, I planted twice as many squash and tiny pumpkins as well. The hope is to grow enough to supplement the chicken feed next winter. Since they store well? I figure small fruits would be better for feeding in smaller lots.
