Your concerns are valid but overblown. First, the Chinese are not that creative...they reverse engineer technology as opposed to concieve it. Second, 2-3 years is a lot of time to "innovate". Steve Jobs taught us the only way to beat the competition is to out innovate them. Third, they should license the "hell of it". Ths kind of world changing technology cannot be kept to your self. If it is not licensed there will a billion "knockoffs" and the company will spend millions suing the imitators. License it and use the fees to continue to innovate. Manufacturing is not the value proposition here...the intellectual property surrounding the design is
