My son would enjoy that. About as hot as I care for is a hot jalapeno (as you know, some can be rather mild). I use chili anchos in chile, and habaneros on cabrito, along with anchos and serranos. But the "dope" evens things out and results in a cascade of flavor, without being "too hot."
