We do ours in a very easy way....

Just snip the chives into small pieces using scissors...nice job to do while you are sitting out in your yard.

We put them in a shallow wide bowl and then just leave them on a counter uncovered. Once in a while, as you walk by them, just give them a stir with your hand.

In several days they should be dry enough to store in a canning jar. We use the half-pint jars or pints if we have a lot of that particular herb to dry.

Put the canning seal and lid on, label your jar and put on your counter....at least for a little while so you can enjoy your work for a little while. Keep long term in a cupboard, where it's nice and dark.

We use them all throughout the winter. Almost anything you cook can have a pinch or more of chives added to it!
