Hmmm. Does pie like that keep frozen well and come out okay?
I tried to freeze diced watermellon but found out you have to eat it almost frozen as it reduces to a slushy drink when defrosted. It just breaks down. The fruit is mostly water and the fibers can't suck up anything once broken down from freezing.

So I just made margaritas out of it.
