Just a thought: anyone concerned about the genetic stability of modified yeast? I don't know much about yeast genetics, but with transgenic mice, protein expression from transgenes will often change significantly, or be lost entirely, within 10-20 generations. Thus, if the same is true of yeast, what you get today from a culture may be quite different from what you get next month.

The same argument probably applies to goats and cows, but here 10 generations is a long time.
