Go with kosher beef ribs, less fat, just keep them moist in the smoker and don't smoke them as long.
Probably even be better the sauce I made ended up having a ton of fat in it.
cs = "country style?"
Sounds good, but what's CS? I keep kosher, no pork/shellfish.
I know you aren't here in flesh but somewhere watching over us cook...so here it is:
Cooked 50lbs of Jambalaya today. Venison meat and Venison Sausage for our annual "BEAST FEAST"
Where hunters in the Indianapolis area get together and raise money for a local battered woman's shelter.
Last night we put together 500 Kabobs- Duck/Goose and cooked them also today. Gonna be a good night!

Here is a new favorite of ours, oven fried chicken.
Chicken wings works very well with this one.
Soak the wings in a sea salt, garlic salt, cayenne and water soup for a day or so.
Drain them off and pat dry, and set the oven for 425f.
In a big pyrex pan or equivilent, melt a half pad of butter and same amount of Crisco. (1/4 cup or so of both)
In a baggie, mix flour,(about a half cup) your favorite seasonings, (we use what we soaked them in), and shake the wings in the bag and set out to set up for a half hour on something like a cookie cooling tray.
Once the oven is up to temperature, set the wings in the cassarole pan, and put them in for a half hour.
Turn them and let them bake for another 20 minutes or so. They should be crispy.
With fresh fruit, and your favorite beverage, mmmmm.
The one I have is almost identical, except it is rectangle.
I love the fact that the handle comes off so you can easily close the grill.
The handle on my vegetable grilling pan doesn't come off.
Phil
i gotta get one of those~ that thing is coo!!!!
