When asked if the SPAC craze was over on CNBC’s “The Exchange” on Tuesday, Duncan Davidson of Bullpen Capital laughed and said, “Yes. The SPAC companies were highly speculative and they collapse and nobody wants to touch a SPAC.”

DWAC, which is buying Trump Media, has seen sizable momentum alongside recent GOP primary developments.
Former President Donald Trump's continued momentum during primary season has translated to a sizable recent boost for the special-purpose acquisition company that's planning to buy the media company that runs his Truth Social platform.
Shares of Digital World Acquisition Co. (DWAC) were up more than 25% in Monday morning activity, putting them on track to extend their win streak to a sixth session. The stock is on pace to rise 96% over the six-session run if current gains carry through to the close.
DWAC's stock was also on track for its longest winning streak since the six-day period ending March 4, 2022. DWAC's Monday rally comes after Ron DeSantis, once thought of as the most formidable Republican Party challenger to Trump, dropped out of the primary race over the weekend and threw his support behind the former president.
Shares also enjoyed a notable bump Jan. 16, rising 29% after Trump took home the Iowa caucus. The New Hampshire primary will take place Tuesday.

Coppertown.....
Dear New Year’s Resolution,
Well, it was fun while it lasted!
Sincerely,
January 2nd
“A New Year’s resolution is something that goes in one year and out the other.”
“I don’t believe in New Year’s resolutions; I only believe in New Day, New Hour, New Minute, or New Second resolutions!”
“An optimist stays up until midnight to see the New Year in. A pessimist stays up to make sure the old year leaves.”
“I was going to quit all my bad habits for the new year, but then I remembered that nobody likes a quitter.”
“Many years ago, I resolved never to bother with New Year’s resolutions, and I’ve stuck with it ever since.”
“Last year’s resolution was to lose 20 pounds by Christmas. Only 30 pounds to go!”
“My New Year’s resolution is to stop hanging out with people who ask me about my New Year’s resolutions.”
“Youth is when you’re allowed to stay up late on New Year’s Eve. Senior age is when you’re forced to.”
“I’m still the same person I was last year—now I’m just hung over.”
“My new Year’s resolution is to stop procrastinating; I’m not starting until next week though.”
OMG, perish the thought!

As one who has plated many salmon, it seems to me that there are times when the sauce-heavy approach of the great Escoffier makes sense, even today. I would give up all of my meals at The French Laundry just to be briefly transported back to work alongside the chefs on the Titanic, cooking and sampling my way through the various courses served in the various dining rooms. Dining on that ship truly represented the High Life. Thank you for the story.

Yes, you can....use your imagination....then whip up a soul-stirring batch, or buy some (it's become a staple at many grocers) ready for the grill or stovetop. You can either take a walk on the wild side, or on the mild side - the choice can be all yours these days.
All good things here. A good primer for young cooks ("If you can prepare all of these recipes with speed, grace, and ease, you'll fit right into any Napa Valley Michelin-starred restaurant kitchen.") Though I eat a heart-healthy 90% vegetarian menu these days, I do still enjoy the occasional repast of good meats and rich desserts (and, in case you were wondering, no, I'm not suffering; there's a delightfully delicious and emotionally fulfilling culinary world out there among the fruits, vegetables, tubers and grains of this world - many folks would be surprised).
The Brazilian dish looks great; I've probably had it, along with the superb churrascaria up and down the coast of Brazil, from Bahia to Copacabana Beach (South Americans know their meats; I've also had my best cup of coffee there). When I saw the Philly Cheesesteaks photo, my heart skipped a beat (good stuff!). The chocolate mousse photo reminded me of an outstanding version made with avocado, discovered in a quaint little cafe in an exotic setting somewhere as I was traveling; avocado-based recipes are now commonplace online, and many will rival any dairy-based version in flavor and texture. The Ricotta Balls may satisfy my ricotta urges. The Shack Sauce photo immediately brought to mind the trips to Jack In The Box our Dad would take us on in San Diego back in the '60s; the company was famous for its sauce, liberally applied to burgers and the like. But, reading the recipe, I realized that it couldn't be the same; the use of dill pickles, rather than sweet pickles, is contraindicated in any Thousand Island-like sandwich sauce that I would want to utilize (and I've never been to a Shake Shack; am I missing something?). The rest of the list is classic, and shouldn't need much introduction for accomplished cooks. Coconut Cream Pie, served to dinner guests following the meal, will easily soothe over any errors the cook might have committed during earlier courses; it's always a sure crowd pleaser. As for fruit crisps: ice cream, please! And, seemingly simple Biscuits & Gravy reminds us that, even with seemingly simple dishes, there is very often some not so simple science and chemistry going on behind the scenes, science that is always plotting to keep the cook alert, and honest (as Samin Nosrat reminds us so eloquently: https://www.amazon.com/Salt-Fat-Acid-Heat-Mastering/dp/1476753830/ref=sr_1_3).
When I read this, my memory went back to Muhammad Ali and his fondness for sweet potato pie. But then - no - while he liked sweet potato pie, it was Bean Pie that he really loved, I quickly realized, remembering hearing about the Bean Pie Boxer when I was a kid in the '60s.
I do believe I'm going to have to whip up a batch. Just for old times' sake, you understand. Perhaps it will deliver flavors that float like a butterfly and sting like a bee.
"Lana Shabazz, Muhammad Ali's personal chef, is credited with an iconic recipe for this pie—famously blamed as the reason Ali lost The Fight of the Century to Joe Frazier in 1971."

At first glance, the photo screamed "Iowa State Fair!"
I really don't get the habit of piling grease (mayo or mayo-based dip) on top of more grease (French Fries); at the very least the fat should be balanced by acid of some measure, as with catsup/ketchup ("Because banana ketchup combines the tanginess of vinegar with the sweet richness of bananas, it tastes wonderful on a plate full of fries. Here, the acidic vinegar component helps cut through the fattiness of the deep-fried potatoes, balancing out their overall flavor."); and in Kenya they seem to have the right idea ("While many cultures serve french fries in a sauce, the Kenyan trend of masala chips are way more complex than just that. This special recipe rejects the idea of simply dunking a fried potato into a condiment and munching away. Instead, it involves serving an entire plate of french fries under a thick layer of spicy sauce that can include any number of veggies, ranging from sweet tomatoes to more pungent ingredients like onions or garlic."). And of course, what would London fish 'n chips be without good ol' acidic malt vinegar?
