2 each Bottles beer
1/4 cup Chopped onion
1 tablespoon Butter
1/3 cup Prepared mustard
2 teaspoons Celery seed
1 teaspoon Ground turmeric
4 pounds Country-style ribs
2 each Cloves garlic -- minced
1/2 cup Vinegar
1/4 cup Honey
1 teaspoon Salt
Pour beer over ribs in large pan. Add additional beer, if needed, to fully cover ribs.
Bring to boiling, reduce heat, cover, and simmer 45- 60 minutes or until tender.
Drain. In a small saucepan, cook onion and garlic in butter until tender but not brown.
Add remaining ingredients and bring to a boil. Simmer, uncovered, 15 minutes or until mixture is reduce to 3/4 cups.
Grill ribs over slow coals 20-25 minutes, brushing with sauce and turning every 10 minutes.

***DRY RUB***
4 tablespoons paprika
2 teaspoons salt
2 teaspoons onion powder
2 teaspoons black pepper
2 teaspoons white pepper
1 teaspoon cayenne
***BBQ SAUCE***
6 tablespoons salt ?
6 tablespoons pepper
6 tablespoons chili powder
4 cups ketchup
4 cups vinegar
4 cups water
1 large onion -- diced
1/2 cup molasses
Dry Rub:
Mix all ingredients together throughly.
BBQ Sauce:
Combine ingerdients in a large saucepan. Bring to a rolling boil, reduce heat
and simmer 1 1/2 hours, stirring every 10min. or so. Pour into sterilized
canning jars seal and let stand 2 to 6 weeks before use.
Preparation: Spinkle dry rub liberally over ribs. allow to stand 20-30 min. at room
temperature until ribs appears wet. Prepare a smoker for long, slow (230x)
indirect cooking, using hickory or other hard wood chips.
Cook ribs, bone side down, for 2 hours at 230x in a smoker using indirect
heat. Turn and cook for 2 hours more. Turn and cook one more hour. During the
last 15min. baste with bbq sauce diluted by half with water(if a tomato or
sugar based sauced is used for more than 15-30 min. it blackens and chars).
Serve ribs with warmed, undiluted sauce onthe side.

1/2 c Vinegar

2 tb Tomato paste
1 tb Mustard,prepared

1 t Garlic salt*
* - or plain salt if preferred. Combine ingredients and beat with a whisk
until well blended. Use as baste for charcoal-broiled chicken.

Saute the onions and celery in the oil without browning. Add all other
ingredients. Simmer for 30+ minutes. Thicken with cornstarch, as desired.

Beer Barbecue Sauce

In large bowl, combine barbecue sauce, ketchup, beer, honey, lemon juice,
vinegar, mustard, Worcestershire sauce, hot pepper sauce, pepper, garlic and onions.
Place food in marinade and let stand at room tepmerature for up to 2 hours
or in refrigerator overnight. When ready to cook, remove food and place
marinade in saucepan and cook for 10 minutes or until thickened.
Use as sauce for basting or serving with cooked food.

1/2 c Bacon drippings
3 tb Lemon juice
1 tb Worcestershire Sauce
1 t Garlic Powder

Butter is preferred in this dish for flavor, but you may prefer
margarine.
In a saucepan, combine margarine, bacon drippings, lemon juice and
Worcestershire Sauce. Cook over low heat until butter margarine melts.
Dissolve Chili Powder, Salt, Pepper and Garlic Powder in water and add to
margarine mixture. Bring to a boil. Lower heat and simmer for 15 minutes.
Makes 3 1/2 cups. Will serve to baste 6 lbs. brisket.

All-American Barbecue Sauce

2 tablespoons Unsalted butter
2 medium Onions -- finely chopped
1/2 cup Ketchup
6 tablespoons Brown sugar
6 tablespoons Worcestershire sauce
1/4 cup Prepared steak sauce
2 tablespoons Cider vinegar
1/8 teaspoon Hot pepper sauce
In medium-sized saucepan, heat butter over medium-low heat.
Add onions and saute for 5 minutes, but do not allow them to brown.
Stir in ketchup, sugar, Worcestershire sauce, steak sauce, vinegar,
1/2 cup water, and hot pepper sauce. Bring to a boil; reduce heat and simmer,
stirring occasionally, for 20 minutes. Meanwhile, wash and sterilize 2 pint jars.
To sterilize jars, put in a large saucepan and fill pan with hot ( not boiling) water
to 1 inch above the tops of the jars and boil 10 minutes; drain. Pour sauce into hot jars.
Cap, cool, and freeze or refrigerate for 2 to 3 weeks. Makes 1.1/2 to 2 pints.
Spicy Grilling Rub
Ingredients:
1/4 cup paprika
1 to 1 1/2 tablespoons cayenne pepper (depending on your "heat" preference)
2 1/2 tablespoons freshly ground black pepper
3 tablespoons garlic powder
1 1/2 tablespoons onion powder
1 1/2 tablespoons salt
1 1/2 tablespoons dried oregano
1 1/2 tablespoons dried thyme
Preparation:
1. In a medium bowl, combine all ingredients; mix well.
2. Store in a cool, dry place, in an airtight container or sealable plastic bag.
Yield:
32 servings when you use 1 1/2 teaspoons per serving of meat.

Per serving: 0 calorie, 300 mg sodium.

2 whole slabs pork baby back ribs
Dry Rub:
8 tablespoons light brown sugar, tightly packed
3 tablespoons kosher salt
1 tablespoon chili powder
1/2 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon jalapeno seasoning
1/2 teaspoon Old Bay Seasoning
1/2 teaspoon rubbed thyme
1/2 teaspoon onion powder
Braising Liquid:
1 cup white wine
2 tablespoons white wine vinegar
2 tablespoons Worcestershire sauce
1 tablespoon honey
2 cloves garlic, chopped
Preheat oven to 250 degrees.
In a bowl, combine all dry ingredients and mix well. Place each slab of baby back ribs on a piece of heavy-duty aluminum foil, shiny side down. Sprinkle each side generously with the dry rub. Pat the dry rub into the meat. Refrigerate the ribs for a minimum of 1 hour. In a microwavable container, combine all ingredients for the braising liquid. Microwave on high for 1 minute.
Place the ribs on a baking sheet. Open one end of the foil on each slab and pour half of the braising liquid into each foil packet. Tilt the baking sheet in order to equally distribute the braising liquid. Braise the ribs in the oven for 2 1/2 hours.
Transfer the braising liquid into a medium saucepot. Bring the liquid to a simmer and reduce by half or until of a thick syrup consistency. Brush the glaze onto the ribs. Place under the broiler just until the glaze caramelizes lightly. Slice each slab into 2 rib bone portions. Place the remaining hot glaze into a bowl and toss the rib portions in the glaze.
*This recipe makes several batches of dry rub. If more rub is needed, it can be extended by any amount, as long as the ratio of 8:3:1:1 remains the same.
