I'm always substituting when I'm in the middle of preparing something and find the pantry bare. Sometimes it works, sometimes it doesn't.

Earlier this evening I wanted a bloody mary...couldn't believe I was out of Worcestershire sauce so I substituted oyster sauce I'd found in San Antonio...it was made in Thailand. I think it was the best bloody mary I'd ever had.
