Yep. You could use it for that.

For my stuffing, I just cut up the onions in chunks and throw them in the processor. Pulse maybe six or seven times, till they're the size I want. Then I put them in a skillet, and add celery cut in pieces to the processor and repeat. I do them separately because they're not exactly the same consistency, so if I did them together, they might not both end up where I wanted them.

Then I wilt the onions and celery in an obscene amount of butter, add poultry seasoning, and add to the stuffing bread.

For decades, I chopped the onions and celery by hand. It was a drag, but I'd never considered doing it any other way. And then one day the light dawned. I figured I might as well try it. And it worked just fine. Taking one-tenth of the time...

The slicer disk should work for the potatoes.
