So if I understand this correctly I can use the thing to chop up my celery and onions without grinding them into mince.

And I can slice potatoes for boiling and they won't get chopped up?

Which brings up another question. I quarter my potatoes for boiling but my wife slices them.

I think I'm doing it right.
