You are correct about the health food craze.
In my city, which caters to up-scale healthy folk, there are farmers markets which only sell organic products. You must prove it is organic, before selling them.
They sell everything organic...from fruits, vegetable, cookies, candies, ice cream, pop sicles....the list is endless.
These products are NOT cheap, but people will gladly pull out wads of cash. Funny, while oogling over the candies, I discovered that a small piece smaller than a silver bell, costs two dollars. People paid for that.
Advertisements in the not so distant future will send this top spinning with no turning back.
