Need a volunteer for KP today, LOL. Had rotisserie chicken Sunday so gotta make chicken soup, gonna make that pasta salad that Marc told me he didn't like when we first met (need a stick to keep him from eating it all now with my recipe, may make 5 lbs of mashed tater to freeze. Plus I really want to try the recipe in the video just for fun, they look so pretty. Got a guy coming to stain the patio fence in the morning. HELP!!!!, LOL
Nah, I used my electric tater peeler then shredded the taters in the food processor, very easy.
Well, I made it but altered a bit and need to add more next time. I used 3 taters and 4 eggs, I added some sauteed onions (more next time) and should have used some seasoning in the taters but the guys loved it got the thumbs up. I used the 10 fry pan lid to flip the taters over. The lid I used didn't have a lip so you may want to use a cutting board or something. I didn't use the parsley or chili pepper.

Potatoes 3pcs (~300g)
Parsley (didn't use)
3 eggs (used 4)
Chili pepper flakes, Black pepper (didn't use)
Rice flour 2 tbsp (I used about 4 tbsp of reg flour)
salt 1 tsp
vegetable oil
Cheese ~150g (didn't measure, just hand sprinkled a bunch of shredded motz)
Peel and shred taters and soak in bowl of water
Beat 3 eggs and add parley, stir all
Drain shredded taters and coat with flour
Add egg mix to shredded taters, mix well
Add veg oil to fry pan and add ½ of tater mixture
Add cheese on top
Add the other ½ of tater mixture
Cover and cook over medium low heat 10 – 15 minutes
Flip the taters over using a cutting board or something
Add a little more oil and add the taters back, uncooked side down
Cover and cook about 7 minutes

Do these look pretty or what, mmm mmm Gonna try it one of these days. One thing I noticed in the CC is it says cut into 8 pieces but video shows 9, so will do 9 and will shape the dough like a rectangle so can get same size pieces. Typed up recipe below pic if anybody wants it.

Hey, think I'll try this, may add some ABC (Already Been Cooked) meat on top of the cheese, like, ground burger, sausage, or chopped up ham cubes. Hey, does that look like a 10 inch frying pan? I may add an extra egg to hold things together better, whatcha think? Pretty sure I'll added some sauteed onions to the taters.
