Why would Hipple bother to be interim consultant if it meant risking jail time by tying his signature to and AEGY document, Why not just let Benz do it?

Oh, yeah, Benz must have fired Hipple as his client first. Better for Hipple to get the chore done than not at all, those extra pennies he'll make might get him a better room with a view when he goes on holiday...
