In years past when farmed salmon first came on the market, the growing methodology was not sophisticated and employed the creation of ponds in which the salmon was seeded, grown and harvested, which resulted in extremely toxic and unhealthful environmental conditions. However, today aqua-culture farming has evolved into a real and highly sophisticated science and while some pond farming is still going on, the major supply of farmed salmon is coming from government-approved and licensed farm fisheries in Canada and Norway.

Whole Foods and other quality-conscience chains sell enormous amounts of farmed salmon, however, they have strict qualifying standards relative to sustainability, feed, farming conditions, etc. before accepting a supplier’s product. When wild salmon is in its short 4-month season to be offered fresh, it will appear in the stores. Smoky Market purchases its farmed Atlantic variety salmon from a supplier in BC, Canada and it’s the highest quality of purity and oil content; it’s the level of oil content that enables the smoke to penetrate the fish. SMKY pays a premium price for its supply, but well worth the additional cost for consistent quality. Our development in Canada will enable SMKY to also offer wild salmon varieties.

Our wood-burning oven technology is a highly unique process and our Smoke-Baking technique is the reason for SMKY salmon being the only smoked salmon on the market that is truly a naturally prepared and healthful prepared food product. All commercial smoked salmon found in the stores is brined in solutions very high in sodium, sugar and water content, which is why the product is typically dry and salty.
