Most of my breads use a starter, but not all. I keep a jar of yeast in the fridge for the English muffin bread, pizza dough and making buns/rolls. If I bought those little envelopes of yeast, I'd go broke. I get mine from the bulk store.
Starting a starter is easy.
Good grief man, you've been trying to grow an avocado tree for how many years? You can grow a starter in a week or two. After that, if you keep it in the fridge, it can stay there for weeks between feedings.
