I'm watching an old "Top Chef Amateurs" show...and I get that their day job is not in the business but, dang, these ppl are putting out things that would be in an upscale restaurant. And creative! because they don't have these paradigms that professional chefs have. I mean, they are paired with past Top Chef contestants but they're supposed to be there for prep and guidance and not necessarily creating or influencing the menu (they do throw in things like "what acid do you think should go with this?" but not "let's use pickled jalapenos here to add acid".)

One guy added walnuts to something and every single professional in the room was going "wtf?" and every one of them was stunned that he pulled it off and it tasted like nothing they'd ever tasted.

So agree. :)

True. Some of the meals I make were things my dad made for us when I was growing up. He'd boil up some elbows, cook some hamburger then add in some jar bought marinara all in one pot.

He'd also cook some hamburgers in a cast iron skillet throw some water in the pan and quickly cover and use that as gravy on mashed potatoes. The kitchen did get a little smokey. lol.

I still make his stuffing every year for Thanksgiving. Some traditions never die.
