Actually, that "and" just separates the last item in the list, "swatting flies". It's not an absolute rule, but a list of three or more items should include an "and" before the last item. The serial comma, sometimes called the oxford comma, and whether or not it should be used before that "and" generates some debate as well.

Some revision suggestions:
Simply adding a preposition to separate the end of the list from the next phrase, e.g.,
I specialize in the removal of cockroaches, jackals, vultures, wolves and in swatting flies.

I would recommend a little more revision just to make the sentence even clearer, e.g.,
I specialize in swatting flies and in the removal of cockroaches, jackals, vultures, and wolves.

There was a book that was pretty popular a few years ago that made these types of grammar topics sort of interesting (to the degree that grammar can be interesting). It was called: Eats, Shoots & Leaves: The Zero Tolerance Approach to Punctuation
