I can see why that would seem practical, since they'd be within easy reach while you're cooking. But don't they dry out?

I have my spice rack built in under the countertop right next to the stove.

I've seen that in watching This Old House. I like the idea of a slide out spice rack. Right now we have a spice cabinet which was an old medicine cabinet that my FIL made then we have racks on a cabinet door on the other end of the kitchen.

It takes a while to find the spices we need..
