Your sources are incorrect. Tripoly is for the meat, not the shell. Your source is absolutely correct, only after the shrimp are peeled.

Since SHMP has no processing equipment (to peel etc), the comparison is not valid.

Tripolyphosphate is generally added to shrimp after it’s been peeled, so to avoid it, try to buy shell-on shrimp and peel it yourself. (Save the shells for shrimp stock.) This is not true of sodium bisulfite, though.
