I don't think theres a fix for this problem that all current EVs suffer. A combination of better electromagnetic shielding, like Cybertruck, and AI that can monitor voltages throughout the car may be able to prevent them from going out of control. However excessive voltage will occur and the best way to prevent that from causing the EV to go out of control is pull it over and car go into safe mode.
