Interesting posts, thank you. I don't have a sous vide yet, but would love to cook with one some day. I was wondering about the ability to control the temperatures in different parts of the mold and why that would be advantageous, but you answered that. Also, your comment about the process is interesting and I guess it's where Eontec/LQMT hold the edge over anyone else wanting to get into BMG. Thank you for the explanations.
