I don’t disagree with you about the price factor..there are many restaurants that will not (and can not afford) to pay for better quality shrimp. These cater to a different demographic of the dining public.

However, there are thousands of higher-end restaurants and an ever-growing sector of the public that demand (and WILL pay) for higher quality products.
