They are looking to sell fresh shrimp. I always assumed fresh shrimp meant head on - no processing at the SHMP facility.

Peter said the shrimp weighed between 16 - 49 grams, but they wanted to hit an avg of 22 grams (which they hadn’t done yet). This implies that the majority of shrimp were below 22 grams so the shrimp shown wasn’t middle of the road at all.
