Awesome! That sounds like the documentary I spoke of. He also visited a convent in Bethlehem CT I believe and one of the sisters had a degree in microbiology. They were taught how to make cheese by a woman from France and she said "always make it in wood". Well the health department declared they couldn't and must use stainless steel. The cheese wasn't the same and though it slips my mind exactly what issue arose from it I believe people got sick. As it turns out, the sister who doubled as a microbiologist started researching and found that the wood was naturally antimicrobial and healthier and safer. Guess what the use to make the cheese in now!?
