I'm not a bacon wrapped anything fan. In order to get the bacon to the way I like it, whatever it's wrapped in gets so overcooked it's not even recognizable.

I know what you mean. And it's one reason I've never actually made bacon-wrapped shrimp. But of course shrimp cook very briefly; a chicken breast takes a good deal longer. Some of the commenters said they used prosciutto instead of bacon, which would solve the problem. Others said they got the thinnest bacon they could, and sort of stretched it as they put it on the chicken breast.
