This makes sense. I was taught to drain the pasta and rinse with cold water, to stop the cooking process; taking it from the pasta water to the sauce saves steps.

Ricotta and mozzarella are on the list this year. Both of my children have already crossed that bridge and made their own cheese. Right now I am into making my own condiments, this weekend it's fresh horseradish, another staple around here.
