I wouldn't look at it that way. This was essentially the first location they renovated from scratch, the original 2 grew organically over time.
Plus this is the flagship so is bigger than what the others will be. Most will be just one level.
As they stated during the renovation they had to take more time to integrate POS and other technology that will be the model for all future locations. So much extra time was taken to make sure they addressed everything as they begin the rollout of franchise locations.
So in summary this location took longer for many different reasons which should greatly streamline future locations.
The next locations will be modeled based on this third location. So much easier for the franchises to copy the design. Also, Franchise owners will be focused on each of their franchises, therefore, it can be much faster.
They originally said construction to start in may and would try to be open before the end of August. I believe they broke ground a little late and they realized a lot more work went into it than originally planned! I’d say they have a pretty good timeline going forward based on midtown’s construction. Once a location(building) is picked I’d say 3-4 months most likely for corporate locations. Maybe longer for franchisees as they’d have to go through training, although they’d probably do this step prior to picking a location and beginning their lease?!
