Ditto on the variety of airplanes experienced. Airbus narrowbodies (A319/320/321) are about 7" wider than the Boeing 737. As such, Airbus has been able to maintain the 3x3 seating, but make each seat about 1" wider than the same arrangement found on the 737. Even the widebody Airbus 330/340 variants are more spacious than the 767 because they were designed as a direct competitor (and also have a cheaper CASM).

The 767 airframe was designed in the 70's and introduced in the early 80's. Airlines around the world purchased them in droves because - in the low cost fuel days - they were extremely capable for their missions. Not to mention that they shared cockpit commonality with the single-aisle 757 so that pilot crews had minimal training to transition between the two.

As far as interior comforts go, outfitting an old 767 with modern amenities like in seat TV's, wifi, redesigned overhead bin space, etc. is not cheap and requires a bit of work and additional supplemental type certification. The newer planes already come with those things out of the factory (when chosen by the airline).

So, the 767 the Baltia dba USGL will most likely not have many interior enhancements like this. They need to begin generating revenue before even thinking about those kinds of enhancements on an old airplane.
