Janice....we're very lucky in that we have three nephews who are or have been in the 4-H program ....they're into raising calves which is lucky for us as we've been sponsoring and buying beef from them for years.

We usually split either a young bull or heifer twice a year with their parents so we always have good meat year 'round.

I give up some of the organ meat to my sister-in-law and she gives me the tail. But like you said... there is just one tail to an animal so don't have the oxtail soup often. Once in awhile it's put on sale in the meat market for about $4.00 a pound though....
