The July issue of Texas Highways magazine has an 8-page spread on the Chicken-Fried Steak. It includes such eateries as the Broken Spoke in Austin, the Big Texan Steak Ranch in Amarillo and Clark's Outpost in Tioga. Also Rudy Lechner's Restaurant in Houston which "serves an Austrian version of CFS that eschews cream gravy in favor of cheese sauce."
One of the restaurant owners says that some out-of-state customers aren't familiar with CFS -- "A few ask for it medium-rare, and we have to explain that it just doesn't work that way."
