After St Patty's Day I always make poached eggs and corned beef hash the next day. I chop up the left over corned beef, cabbage, potatoes, carrots and onions and brown them in a skillet. Then I serve a poached egg over it.

Got my 14 year old son hooked on it. My wife the health nut won't eat with us.

And it works for breakfast or dinner.
