All this "at will" language means is that either party can terminate the employment relationship at any time for any reason -- not simply due to "cause".
This means both parties need not worry about breach of contract or wrongful termination issues should either the employer wish to move in a different direction (and the employee has never done anything wrong or gotten bad performance reviews, and would otherwise not have a basis for being terminated for any just cause) or the employee gets a better offer elsewhere and is now free from the remaining years on her contract w/o obligation to the employer.
