It seems to me that they have good management with Maury Peters running the show. He has been doing this a long time and knows what the best hours for a pizza shop are and he knows how to run the shop the most efficient way.

Empire Pizza's president, Maury Peters, founded Mariano's and its predecessor, Crescent's Pizza.
