Thai Curry Chicken
2 Big fat chicken breasts (skinless/boneless) cut into 1" chunks
1 Medium onion diced
3 Cloves of garlic minced
1 cup of frozen mixed veggies
1 cup rice (not cooked)
1 tsp thai curry powder (hot stuff) Mmmmmmmmm
2 cups chicken stock
salt & pepper to taste
olive oil
Saute chicken, onion and garlic in oil over medium low heat for 5 min. Add rice, stock, curry powder, salt & pepper, bring to a simmer and cover. After 5 minutes stir in frozen veggies and simmer covered for an additional 10 min. Make sure rice is done and serve it up!
