I am pretty sure they have a secure location to store the final product until sale. I don't think they would drag gold and silver back out to the middle of nowhere. After the smelting is complete, they probably have a security co do the p/u and deliver it to that secure location. We are talking about a sizable quantity of product here, because they most likely don't smelt the metals one ounce at a time. ;)

Smelting I believe is the word, btw.
