Hi, Phil. I've seen it done on a Foodnetwork show. But really can't remember now.
Maybe try this, having taken the leftover MC out of a refer. Cut a chunk about 2 inches square, dip it in an egg wash and bread it with Pakno bread crums, then fry in a frying pan with some oil.
