because they could market to you once you click on the barcode and it tells you to submit your email address to get the coupon emailed to you to use right away. a valid and working email address is the tradeoff for the coupon. I doubt businesses will just offer coupons to an already captive audience without getting something in return (the email address) unless I am missing something.
