Hitman... I've canned jalapeno peppers many times and have several recipes. To answer one of your questions re the hot bath...that's a must. Very important.
I didn't do any canning this year, however...I'll post a couple of recipes here after the market closes today. OK?
I've done the one with olive oil too, BTW...but be aware the peppers should be refrigerated after opening and the oil congeals which isn't too appetizing (to me anyway) so I prefer using water with the vinegar.
