Yep, that is exactly how they are described in the code. I see them all the time in two and three story construction. Remember the purpose of Fire sprinklers is to control the spread of the fire until the FD can arrive and put it out. The association has done extensive testing to determine what is required to achieve this goal. The code make no distinction beyond placement of the sprinklers with regards to manufactured joist as you you describe. I am not certain but I believe that the truss must be treated with some type of fire retardant material before installation. That is another code I'll have to look it up.
