Woo hoo, another successful experiment. Used the tater peeler the other day and peeled 2 medium taters, tater peeler works ok but leaves some skin on, not much, but chopped up the taters to bite sized pieces, boiled them until soft but firm, then stuck in fridge a a day or so. Coated them lightly with liquid ranch dressing, then bread crumbs and baked at 425 for 15 minutes or so. Strange!!! they're all gone, LOL May marinade in Italian or Balsamic next time.

Of course you could boil the whole tater up, let cool, then dice.
