Ha - yeah, most Southerners don't scrimp on the fat, butter, sugar when making their casseroles. For Thanksgiving we had a sweet potato casserole that had 3 cups of white sugar and 1 cup of brown sugar - 4 cups in a 9 x 13 dish! And I think 2 or 3 sticks of butter! It was good but tasted like dessert.
