I've never used a thermometer in a turkey, although I agree the pop-ups are much better now. However- my dad taught me that when you can" shake hands" with the turkey (the leg moves easily to the touch), it's done. That has never failed.
Pie, pumpkin bread, cranberry sauce are done. I just chopped up about 5 lbs of celery and I'm taking a small break before I do onions
