I was too lazy to go get gingersnaps and mascarpone. Of course, you could substitute ordinary whipped cream for the mascarpone.
As I said before, my mother used to make icebox cake. All you need are plain chocolate cookies, whipped cream, and a dash of vanilla. You just make the whipped cream with the vanilla. Then you spread the cream on one side of the cookies, and line them up. Then cover the two lines of cookies with the rest of the whipped cream, and refrigerate for at least four or five hours. Long enough for the cookies to soften. Really easy, and really good.
This is what my mother made. Possibly a half-recipe, since there were only three of us.
