Trying to decide what to make for dinner night after night is tiresome, so I have been trying different recipes that I find online.

I also am tired of meat day after day.

Today I made Pasta Fagioil. It actually was pretty good. Since I am married to an Italian and my mother-in-law was a great cook, it was a challenge.

Here is the recipe for anyone who is interested.

1 tbsp Basil, dried
1 Basil, fresh
1 Bay leaf, large
1 15 ounce can Cannellini beans
1 Carrot, medium
1 Celery stalk, medium
3 cloves Garlic
1/2 Onion
1 tsp Oregano, dried
1 tbsp Parsley, dried
1 15 ounce can Tomato sauce or crushed tomatoes
2 14 ounce cans Chicken or vegetable broth
6 oz Ditalini pasta or other small pasta, dry
Kosher salt and pepper
1 tbsp Olive oil
Parmesan cheese, grated
2 cups Water

In a large heavy pot or Dutch oven, sauté the onion and garlic in olive oil over medium heat.
Blend the beans with one cup water in electric blender until almost smooth.
Add blended beans to pan then add the can of tomato sauce, celery, carrots, chicken broth, basil, bay leaf, parsley, oregano, salt and pepper.

Add 1 cup water and bring to a boil. Simmer, covered for 20 minutes stirring occasionally.
Add pasta and cook uncovered until pasta is al dente, according to pasta directions.
Ladle soup into bowls and top with grated cheese (extra), if desired
