I agree with your post. But my only correction is that the process is also extremely expensive.

What some people don't know is that bacteria fermentation can be even more expensive than yeast. It is extremely hard and expensive to sanitize a bioreactor in order to promote the growth of only a single bacterium. If you create ideal conditions for bacteria, than many of the bacteria that are present will thrive in those conditions as well, not just your target bacterium.

Even in the cleanest conditions, you have some degree of contamination from other bacteria. This process is extremely expensive. It's also why I have my doubts about companies searching for other nutrient inputs (like wood or other starches). Any input that is grown from plants, will have tons of different organism living in it. This is not good if you are targeting a single yeast/bacterium, let alone targeting a single protein.
