Indeed, contamination is a significant impediment to lab meat becoming mainstream, IMO.

Pharmaceutical-grade specifications and aseptic “clean rooms” would be necessary due to the slow growth rate of culture cells, which makes them extremely vulnerable to contamination from bacteria and viruses—[Good Food Institute’s] report assumes only “food-grade” specifications.

I don’t think viruses (at least the ones we currently know about) would prosper in the kind of environment the lab-meat industry is creating, but bacteria and fungi are another story!

p.s. I like the way the article used a cedilla in the word, façade :- )
