I like roast beef on the rare side. Any time that I've seen the pre-packaged stuff it looks almost well done.

I've seem plenty of recipes (videos on YouTube as well) that describe how easy it is to make a roast beef...fire the oven temp to 500, season the roast then put the meat in and immediately turn off the oven. Leave the roast in the office for a couple of hours and...voila...medium rare.

Some day I'll do it.
